Citrus fruits contain citric acid monohydrate, a tricarboxylic acid. Because of its antioxidant characteristics, citric acid is employed as an excipient in medicinal formulations. It serves as a preservative and helps to keep active substances stable. The water-soluble form of citric acid is monohydrate citric acid. It consists of one water molecule and one citric acid molecule. Acidifier, flavouring, and chelating substance that is widely used.
