Isvaari Brings You Malabar's Fairtrade Dried Peppercorns. Malabar pepper is a variety of black pepper that originated as a chance seedling in a geographical region of malabar coast in South India the home of peppers. The plant (Piper nigrum) is a flowering vine in the family Piperaceae, cultivated for its fruit, which is usually dried and used as a spice and seasoning. The fruit, known as a peppercorn when dried, is a small drupe five millimetres in diameter, dark red when fully mature, containing a single seed. Black and white peppercorns are both the fruit of the pepper plant, but they are processed differently. Black peppercorns are picked when almost ripe and sun-dried, turning the outer layer black. To produce white peppercorns, this outer layer is removed before or after drying, leaving only the inner seed. White Pepper’s unique processing makes it much hotter and removes many of black pepper’s sometimes overpowering aromas. This makes it a common ingredient in Chinese cooking, and a necessary part of many European dishes and French sauces.
