Achieving a well-balanced flavour profile, with minimum off-notes, is fundamental to gaining client acceptance. Common flavour profiles in protein bars consist of vanilla, chocolate, strawberry, brown candy milk/dairy, nut, fruit/citrus, espresso and spice. These specific profiles also are powerful in overlaying bitterness and astringency that may be related to a few ingredients. The addition of a cooling agent, which includes a mint flavour, can lower the notion of astringency on the tongue.
